Everything
If you have to mention something. Then I would say, the water features. Two if them where not operational. And I would love to see them working again.

The team grows on you - very genuine, kind personalities who do their utmost to meet the requirements of guests. The property has the most beautiful location and views.
The bathtub was mysteriously absent from the bathroom. There was no flowers or fruits or champagne in the suite to welcome the guests.
The spa is fundamentally mismanaged and lucks basics such as changing room amenities and drinking water in the steam room, pool and all areas. No teas, snacks, fruits or other fundamentals that would normally be available at any spa run within a luxury property.

beach location. place with history and authenticity.
breakfast is minimal, just eggs as a 'hot' meal. service at breakfast was not welcoming, didn't clean empty plates from the table (I was doing it myself).
one day nobody restocked still water in the room, I had to ask for it. cleaning department took water glasses and didn't bring them back.
when we arrived and I switched on the air conditioning in the room, lots of dirt (black small particles) fell on the bed of the child.
room 108 that I and kids got is straight up above one of the entrances. at 1am there were people shouting and talking very loud, so we could hear everything, kids could not sleep. early in the morning there were some loud sounds of service. consider high noise level at least at that area.

We had a wonderful experience, since the moment we arrived, the staff made me feel incredibly welcome and their hospitality was outstanding. One of the highlights of our stay was the fantastic breakfast offered by the hotel. The quality of the food exceeded our expectations, and the attentive staff ensured that I had everything I needed. The hotel itself is impeccable and super charming, and services provided were excellent across the board.
Hostal La Gavina is a great choice for a comfortable and enjoyable stay. While the rooms are spacious and pleasant, it is worth noting that certain aspects of the hotel's infrastructure, given its age of over 90 years, could benefit from refurbishment. In particular, the noise isolation could be improved by sealing the doors more effectively.

the location and views were stunning and the hotel itself was old skool luxury.
the service was not up to 5 star standards. a number of the restaurants service was simply not acceptable for any restaurant. we and many other customers were ignored for up to 30mins, wrong orders delivered and very difficult to get the attention of staff who spent large amount of time talking and not taking care of the guests.

The hotel interior was stunning - beautiful antiques even in the corridors, and salons, bars, lounges galore. The bedroom was enormous, as was the swimming pool, and the grounds are well kept.
Part of The Leading Hotels of the World group, this is a very expensive hotel. In this price bracket the service should be exemplary; you should be made to feel that no reasonable request is too much trouble. But the service was mediocre at best. It was cold and aloof, and even the smallest request felt like a hassle - like having to go to the front desk at 215pm to ask for a waiter to take my lunch order. My dinner order was forgotten one night. The stunning bar is staffed with people who don't know what they're doing. In a country famous for vermouth, I had to argue with barstaff two nights in a row to get them to acknowledge that they had one that wasn't bog-standard martini (weirdly no Spanish vermouth, but they had Punt e Mes both on the menu and clearly visible behind the bar). Breakfast was underwhelming - again, not bad, but of a range and quality not commensurate with the price point. My impression was cemented when I spent the following three nights further up the coast in a 4* hotel in a more spectacular location, in a room with a prime sea view, for half the price, but received twice the service (and twice as good a breakfast!)

Lovely Spa and good location next to the beach. Beautiful traditional Spanish decor and very clean. The gardens are well maintained with a good selection of trees and plants. The salt water swimming pool is really good and a great size for swimming.
Waiting to order eggs in the morning at breakfast. There was no modern connection for charging phones (USB etc.). We could not watch the BBC world news as the channel was blocked. We were unable to book the Candlelit Restaurant during our stay.

The view and location. The restaurant Candlelight was really good
The beds, really bad for a luxury hotel
