The setting is amazing: very quiet, stunning mountain views, away from everything and everyone. You feel like you're in rural Canada or Norway. I'd say given the setting and the room size, the price per night is very good.
The manager is the kindest person there is. He appears to be having multiple jobs, that of a manager, front desk attendant, restaurant waiter and chef (oh yeah, we'll get to that in the section below), and he does everything with an admirable energy, kindness and smile. I was very impressed.
Finally, I found the whole decor of the hotel, the general somewhat-modernist vibe of an old-school mountain resort very appealing. It's a personal preference thing, but I honestly think this hotel has a lot of charm. I would definitely come there again.
With all the love in the world that I have for the owner and the staff: this is not a 4 star hotel. And there's nothing wrong with it, I think the hotel owners should simply embrace it. I *think* that if you're expecting 4 star hotel levels of refinement and luxury, you'll be disappointed. Again, as mentioned in the "pros" section above, not being a luxurious resort is not necessarily a bad thing, and I think the prices-per-night reflect that.
What the prices do not reflect is the level of the restaurant. I only had 1 dinner there, and the food wasn't necessarily bad, but it was not worth the price at all. I understand the logistics of running a restaurant in a remote place like Langmatt are costly, but I just found the price-to-quality ratio of the restaurant a bit low. That being said, again, there's nothing particularly wrong with the food. It's just overpriced.
The hotel seems to be badly understaffed. I don't know if it's because of the particular dates of my visit (it was a Spring weekend though), but there seemed to just be two people working there, the manager himself (doing most of the tasks) and one other person.
Finally, a linguistic detail. The property is in Alsace, which is in France, so being expected to speak basic French isn't crazy. I can't speak French, and the front desk even had a sign that said: "we speak English," but as far as I could tell, nobody at the property spoke English. They did speak German, and my broken German was enough to get by, but it has to be said that you need basic French or German to communicate.

It was in the middle of nowhere. Perfect for calm down. The nature around was amazing. The view was impressing. Best place for hiking and feeling the nature. Loved the jacuzzi as well. The owner was very sweet and helpful. You could feel that he loves his hotel and his job. Best man. Thanks
