restaurant was fantastic (Michelin starred) some guests may wish for a more casual dining option if staying for longer period. food round pool was good but a little pricey. resort could do more to promote the wine aspect of the resort (wine list at the pool was a little limited) perhaps be a bit more proactive suggesting tours to local wineries?

The property is truly magical and unlike any I've ever stayed in...I'm hesitant to share too much as it's truly a hidden gem and I don't want it to change! The grounds are perfect, the food delicious and farm to table, the staff are kind and hospitable - there's nothing that I would change.
The only "downside" is the converted castle is a short drive from the beach and nearby towns, so it requires a car and/or driver to explore beyond the property. Since castles are not easily moved, this is my only negative comment!

The hotel was impressive - as the gate opened, it felt as if we were entering a cool villains lair! The execution of the interiors was lovely and the grounds are impeccable. The pool is lovely to spend time around too. The room was lovely - although a little dark when trying to do your makeup in the evening. Breakfast was lovely+ fab quality. Lots grown/produced on site which was a bonus.
There isn't much to do locally unless you have a car. Staff weren't helpful if you wanted to go in to Manduria of an evening. They should include an a la carte menu, as like us - we didn't want a tasting menu for 2 nights but it is hard to go anywhere else for dinner if you want a drink. (The hotel did accommodate but we had to ask but we knew others staying there that were not offered the same.)
The bar should open earlier too & their wine tasting/experiences could be sold better.

Unfortunately the experience was disappointing as for the value for money ratio.
The staff was friendly accepting our recommendations and requests but the property does not live up to a real luxury stay.
The property can be reached via two roads which are in quite bad condition (one road is even heavily littered). The resort is one hour away from other tourist destinations.
Several things were disappointing to us:
We stayed 3 nights for a total of 1200 Euros for 2 persons in high season. We would have expected great value for money for this prize. We were disappointed.
1. The sewage in our room stank the first night and the design shower cabin was small plus the shower head sprinkled water due to limestone. (the hotel staff repaired it upon our request)
2. An emergency light above the bathroom arch could not be switched off and lit the room so that we needed to climb on desks and chairs to darken the room despite withdrawal of the keycard etc. (the staff fixed it upon request)
3. The breakfast buffet is good with homemade cakes and Quiche but we were shocked that the hotel charges extra for eggs (8 Euro) and Pancakes (12 Euro). This should be included.
4. there is no selection of teas or juices, the breakfast staff does not speak English, the tables were not promptly laid and our cups were repeatedly dirty.
5. the lounge beds in the garden are exposed to a loud generator noise in the evening hours and therefore are not offering relaxing space.
we felt that the property was overpriced and therefore cancelled our Michelin Star reservation for the gourmet dinner because we were frustrated with the rest.

Facilities and locations
The staff were not very helpful and super slow, which could be understandable but the worst is that the man from the swimming pool and the man from breakfast were both very very impolite. We were also under the impression that the hotel was understaffed.

Amazing location with a beautiful setting. Rooms are confortable and well equiped.
Reception staff was really nice and helpful.
The pool is big and cozy. And the garden really well taken care.

Definitely disappointed to see that all the ceramics in the room comes from ZaraHome when you have a local ceramic production next town (Grottaglie) with beautiful ceramics.
One of the Restaurant’s waiter needs to be more careful. Every morning, there was a mistake in the order and delay for bringing the food. Quite surprising for a Michelin star restaurant/staff.

This place in amazing. The great photos of the pool and castle still don't do this hotel justice once you get there.
We were greeted with a big smile and a team that would do anything for us...such as...our adaptors didn't fit the hotel plugs so they sent someone out to the local shop to get new ones for us.
Bar staff by the pool were very knowledgeable on the hotel wines and were very friendly.
The hotel organised everything for us including airport transfers and transport to the wedding we were going to that arrived perfectly on time for every journey.
The restaurant is absolutely delicious and, for the standard of food, quite reasonable. They also delivered to our room or patio when we didnt fancy / were too hung over for the full restaurant. Michelin star room service is just class!!
The only small mishap we had was with the restaurant manager who firstly didn't believe we had a booking for some reason, he then sent me back to my room to change out of the shorts I was wearing (still in smart shoes and shirt etc) only to see there were many others in the restaurant in shorts when we were finally seated.

Property has beautiful facilities, including a 19th-century castle, and a very nice swimming pool. Don't miss the dinner in the garden, with special lights and very nice atmosphere.
I'd take a room with a better view of the garden - maybe next time ;)
