Wow, what a hidden pearl. The history of this place is worth the visit alone. Besides Nicolas who makes all guests feel welcome and is a genius chef at the same time, the place has beautiful spacious rooms, an incredible surrounding and instagrammers will get very stressed to manage all during a stay. mix that with everything from horse riding, night walk, wine and cheese and/or beer tasting, a fantastic menu, jacuzzi in a cave, views and a heaven for kids. so much to say. it’s an experience driving in, take it as such, because what awaits you is fantastic

This hotel certainly has quirky architecture but is a beautiful place to stay surrounded by beautiful nature. You can choose to do the actives such as horseback riding, learning about the hotel's history, ping pong, hiking, or spending your time relaxing and taking in the views. The food and service were both excellent. The wifi was fast and reliabile. Tip, make sure to reserve your time slot for the jacuzzi.

I visited during the pandemic and was the only guest.
Let's start with the good. This place has very beautiful pastoral scenery and is certainly a nice refuge from the city. The cave aspect is very interesting, and the entire place is well laid-out and designed. The main part of the hotel and the restaurant are decorated in kind of a shabby chic style, which pairs well with the surroundings.
The food is mostly exquisite and certainly has very pleasing aesthetics. The chefs were clearly very highly trained. When I was there, there was a set menu, which was totally fine with me, but picky eaters may not be okay with that if it's normal for the hotel (not sure given the pandemic). Loved the hummus with kebab and roasted cauliflower. I did have a large piece of trout of which a tiny bit wasn't quite cooked. I know from cooking fish myself that it's very difficult to get right, and 90% of it was great, with delicious crispy skin, but I know a lot of people who would've thrown a fit about that. Also, I loved their house wine.
My favorite parts other than the food were actually the cows wandering around on the property and seeing the night stars, which was special and different to me as a mainland American.
I only have a couple of criticisms. You get one activity per day. My first one was the cheese and wine pairing, which was actually very educational and helpful, even if it didn't involve quite the quantity of cheese I had been dreaming about.
I had been planning on doing the horseback riding, but when I mentioned it, the staff played it down. I figured there was a reason for that and just let it go, instead going on their suggested "walk" (keep in mind that this is actually a hike, or at least it would be in the US). I was told it was 30 minutes but it was actually an hour, no big deal but bring water and wear long sleeves as it's quite thorny. The bad part was that the guide literally said nothing the whole time even though I speak halfway decent Spanish and the whole thing felt like an awkwardly silent march through the woods with zero conversation, no photo stops, etc.
The other thing was that the first night, I went to the hot tub after dinner. The second night, I noticed that they had the hot tub going for me when I went to dinner, but when I went back half an hour after finishing dinner, everything was already locked up. It was 9pm, but that was essentially the soonest I could go, since the earliest time for dinner is 7:30 and it takes an hour. I guess they were expecting me to go straight there after eating a lot of food. I wish they had simply messaged me indicating that they would be locking up at 8:30 or 9 so I could've gone before dinner.
It should be noted that, being in a cave, the wifi doesn't work in absolutely every part of the property or of the rooms. Also, you can't wash anything in the sink. And as many others have mentioned, the road in is exceptionally terrible and the hotel is difficult to find.

This is such a wonderful and unique place to stay . The lodge is set in the beautiful countryside.
We had three lovely restful and relaxing days here and the homecooked food was tremendous.
There was nothing we did not like.
