The Eremo was excellent in so many ways - the staff were incredibly attentive (our room was made up multiple times a day!), the food was incredible, we did a cooking course there which was great fun - we were given a free upgrade as they had the room free, and the place is beautiful. Fantastic really - the property has a fascinating history too, and a hotel golden retriever called Max.
Literally the only thing was the number of flies near the pool made it uncomfortable to eat/drink there a couple of times (at the restaurant they burned citronella candles and such so that was great, so they could really just do that at the pool too) - we did visit during one of the hottest weeks of the year though and the staff said they’d never seen it that bad so I imagine they’ll sort that of it happens again.

The dinner and breakfast were delicious

the property itself is gorgeous!
the facilities are in TERRIBLE shape: the shower is unusable, the doors don't close properly so it is super noisy and there is no intimacy since they cater to large parties, i.e.: - full tour-buses!!!
5.0
The friendliness of the staff where nothing was a problem and the way the chef went out of his way to create a special menu for us.

The perfect place to relax surrounded by nature. the staff are very helpful and friendly.
There is very little that I didn’t like. Perhaps the only minor detail is that some rooms need modernization. Nevertheless all room facilities function extremely well and I would recommend the hotel to anyone.

A fantastic place with a beautiful story behind it. The staff is extremely professional and really kind. Excellent restaurant and beautiful outside space.
The only thing that was out of tune and seemed particularly strange in a structure of this level was the attitude of a couple of people (owners) in the breakfast area in the morning. We found them there in hunting gear with a large dog and mostly on the phone (on speakerphone) discussing business and arguing loudly. Grabbing the food with the hands off the table before going out was also not really nice to look at. Not exactly a pretty picture.

The area is very nice. Also good service).
the room we lived in had poor noise insulation(

Breakfast was very good. There were a couple of cyclist groups staying at the same time who used the breakfast buffet early but most items were restocked when we arrived.
We took a cooking class and made three dishes which were served to us for lunch. This was a treasured experience. My friend had a massage which she enjoyed and laundry service which was a little expensive but on time.
Nothing critical to say about our stay. The staff and facility were quite nice. However, one evening after a rainy day we were seated in a nice but separate lower dinning room that was too damp and musty, but this is a renovated old stone building so it may be expected. Better ventilation in this room would be nice (is needed).

the former monastery has been remodeled with perfection
we could hear shower usage and toilet flushing from the above room
the cottage rooms are located far away on the other side of the road at 800 m from the breakfast and dining rooms

The staff were incredibly helpful and accommodating.
the castle is beautiful and very calm.
Outstanding food and wine at the restaurant, very close to Ragusa and a perfect base to explore the South East of Sicily

Amazing staff and service - had an issue with my cottage electricity and they immediately moved me to a room within the hotel with no issues, and then gave me a choice of staying within the cottage or staying at the hotel. I chose to stay at the hotel and I am glad I did - the design is very historic and the breakfast is amazing. I also dined at the hotel on two occasions and the food was incredible. Highly recommended.
The only thing is that the spa is being renovated - the hotel staff still arranged for a treatment in their wellness center. Also, bear in mind that there is no all day dining - and you must drive to get anywhere or hire a cab.

The place is really charming. Staffs were very nice and service was excellent. Very attentive to help us book experience trip and give us suggestions for visit. Breakfast was very good with a lot of choice, especially the fruit. I appreciated a lot.
Only disadvantage is that facilities are a bit old. It would be great if they can be renovated. For exemple repaint the wall to erase the old trace of mosquito, change the waterproof joint in the bath, etc.
